Stemming from Hawaiian roots, poké (pronounced poh-kay) means “chunk” in Hawaiian. It began as a fisherman’s food, where they used to season the cut-offs from their catch to serve as a snack. Typically poké is composed of any meat or seafood cut into small chunks and marinated, the staple having cubes of raw ahi tuna, tossed with green and white onions, sesame oil and soy sauce. Traditional poké seasonings have been heavily influenced by Japanese and other Asian cuisines during Japan’s invasion of Hawaii during the Second World War.
